Dinner Ideas: Two of My Favorite Salad Recipes

There is no reason for your family to groan when they hear the word “salad.” Spice up your salads. By serving salads for dinner, you will feel full and know that you provided your body with essential fruits and vegetables.

 

Italian Salad

Ingredients:

Chicken Sausages, grilled and sliced (1 per person)

Roma Tomatoes, seeded and chopped (1 per person)

Artichoke Hearts, drained and chopped (5 per person)

Green Onions, chopped (1 per person)

Feta Cheese (1/4 cups per person)

Yellow Peppers (2 Tbs. per person)

Olives, sliced (5 per person)

Romaine Lettuce, chopped (3 cups per person)

Directions:

Toss all ingredients together in a large salad bowl. Serve with Light or Fat Free Italian Dressing. Sprinkle with Parmesan Cheese. This salad is also good with a bag of Cheese Tortellini thrown in just after boiling and draining.

 


 

Rainbow Salad

Ingredients:

Romaine Lettuce, chopped (3 cups per person)

Red Tomatoes, seeded and chopped (1 per person)

Orange Carrots, sliced or grated ( 1/2 cup per person)

Yellow Bell Peppers, cored and sliced (1/2 cup per person)

Green Cucumbers, sliced (1/2 cup per person)

Purple Cabbage, sliced thinly and chopped (1/2 cup per person)

Directions:

Toss all ingredients in a large salad bowl. Serve with low fat dressing of your choice. Yummy with grilled chicken!
