A Healthier Pina Colada

With the weather finally getting warmer, there’s nothing like sitting on the patio watching the kiddos play. While you’re there taking some much needed down time, you might as well throw in a pina colada and a pool boy…well maybe not a pool boy but definitely a pina colada! If you’re like me, you don’t want to null and void your earlier workout by consuming huge amounts of calories in a drink. No fear my friend, I have a recipe!

Health-ified Pina Colada

  • 2 really really ripe bananas
  • 1 cup fresh pineapple, diced
  • 1 cup of 100% pineapple juice
  • 1/2 cup of lite coconut milk (usually found in the Asian food aisle)
  • 3 cups of ice cubes
  • 4 wedges of pineapple (to garnish the glasses)
  • 4 maraschino cherries (for garnish)

Okay the preparation on this particular mock tail is extremely complicated so pay attention. Place all ingredients (except your garnishes of course) into your blender and puree. Divide equally into four glasses and garnish with the wedges of pineapple and a maraschino cherry. Enjoy your pina colada (and your down time…which you can use to dream of a pool boy- if ya want to!) 😉
