Hummus has got to be one of my favorite things! I love to dip my veggies in it or use it as a spread for my wraps instead of mayo. It’s just a really yummy (and good for you) thing to have on hand. You can find several different brands of hummus at your local grocery store, but there’s nothing quite like fresh homemade hummus! Experiment and see what you think!

Hummus

  • 1 (15 oz) can of no salt added chickpeas
  • 1/8 cup fresh squeezed lemon juice
  • 3 garlic cloves, minced
  • 3 Tbs tahini
  • 1/2 tsp salt (or to taste)
  • 2-2 1/2 tsp. extra virgin olive oil

Drain the chickpeas (make sure you reserve 1/4 cup liquid from the chickpeas). In a food processor, place the lemon juice, tahini, garlic and salt. Process the ingredients until they are combined. Put the chickpeas and the reserved liquid into the food processor and process until very smooth. Scrape down the sides of the bowl, add olive oil and process until olive oil is incorporated. At this point, you can add whatever spices or seasonings you choose. My brother made a really yummy hummus with all the fresh herbs from his garden, or you could go more with more of a Mexican flavor  and add cumin and chili powder. Maybe you would rather add some sun dried tomatoes and green olives, it really is up to you and your imagination. Have fun experimenting and trying out different combinations.
