Mediterranean Grilled Chicken Pizza

Hello Everyone! I thought after the three week break you all deserved a recipe for your patience, so here it is. This is one of my kiddos favorites! I concocted this pizza  the Friday night before I did the grocery shopping, with what was left in the fridge/pantry. Little did I know it would be requested (let alone, by  my pickiest eater) time and time again!    When they asked me what it was called I told them it was Mediterranean grilled chicken pizza, wanting them to think that Mom actually had a plan when she walked into the kitchen to cook dinner that night. But you know, I’m thinking that maybe someday I’ll change the name to All That Was Left Pizza….or maybe not. Perhaps, I’ll keep that secret right here between you and I.  🙂

Mediterranean Grilled Chicken Pizza

2 Ready Made Whole Wheat Pizza Crusts

1/2 cup Pizza Sauce (feel free to use more if your family likes a lot of sauce)

1 cup Mozzarella Cheese (per pizza)

12  oz. Grilled Chicken Breasts, thinly sliced (per pizza)

1 can Artichoke Hearts, drained and quartered

1/2 can Olives, drained and sliced (per pizza)

1/2  Red Onion, thinly sliced and cut in 1/4’s (per pizza)

2  cups Spinach, washed and towel dried (per pizza)

1 Orange Bell Pepper, washed and sliced (per pizza)

2 Roma Tomatoes, washed, de-seeded and chopped

1/4 cup Reduced Fat Feta Cheese (optional)

4 shakes Grated Parmesan Cheese (optional, but really yummy if added!)

Preheat Oven to 425 degrees.  Open Pizza Crusts and place them on the countertop. Spread sauce evenly over the pizza crusts. Sprinkle 1/2 of the mozzarella evenly over the pizza crusts. Next, evenly distribute the grilled chicken and all veggies  on the pizza crusts (it works best if you put  most of the spinach on the bottom) and then sprinkle remaining half of the cheese over the top of the chicken and veggies. If desired, evenly sprinkle feta over the top of both pizzas, add the 4 shakes of Parmesan cheese  and bake until cheese melts and edges turn golden brown, about 12-16 minutes. Remove from oven and let sit briefly before cutting and serving. This one is best eaten with a fork. If you pick up a slice, all the goodies fall off and you find yourself with a fork in your hand in the end anyway..Enjoy!
