Grilled Corn with a Kick!

With summer here and in full swing, BBQ’s are on our calendars every weekend, sometimes twice. What’s one thing every BBQ must have? Grilled Corn on the Cob of course! If you’ve never tried yours grilled before, you’re in for a treat. Grilling the corn gives it a nutty flavor that just can’t be rivaled, plus it keeps the heat outta the kitchen! This is a recipe I stumbled on years ago and adjusted to my fit my family’s taste buds. I thought I’d share it with you so you can be the hit of the next BBQ on your calendar!

Grilled Corn with a Kick  

  • 4 ears fresh corn, husked
  • 1/4 tsp. sea salt, freshly ground
  • 2 tsp. fresh cilantro, finely chopped
  • 1 Tbs. extra virgin olive oil
  • 1/4 tsp. cumin
  • 1/4 tsp. garlic powder
  • 1/8 tsp. ground cayenne pepper
  • 1/4 tsp. chipotle chili powder

Heat the grill. Carefully, brush the grill rack with olive oil to prevent sticking. Place the ears of corn directly on the grill rack over medium-high heat. Cover the grill. Cook 8-10 minutes, turning occasionally until the corn is lightly browned on all sides.

Meanwhile, mix salt and cilantro in a small bowl and set aside.

In a nonstick skillet, mix the Tbs of olive oil and the cumin. Cook over medium heat about 20-30 seconds. Stir in garlic powder, ground cayenne pepper and chipotle chili powder. Brush cumin mixture lightly over hot corn and sprinkle with salt-cilantro mixture (Just a quick side note: My kids and their friends prefer their corn without cilantro, but every adult I’ve ever served it to likes it better with the cilantro). Enjoy!
