Chilled Strawberry Soup

If you’ve been following my blog from the beginning , you already know how much I LOVE strawberries. If not, you just found out how much I LOVE strawberries. This time of year is when they start hitting the local grocery stores and everyone (well almost everyone) at our house couldn’t be happier! I have a recipe I want to share with all of you that will have you (and anyone you’re willing to share it with) smiling! The ingredients are minimal and the prep time is almost non existent. Try it and see what you think!

Chilled Strawberry Soup

  • 2 cups strawberries, washed and quartered
  • 2 cups vanilla flavored Greek yogurt
  • 1/2 cup milk
  • 1/2 tsp. vanilla

Place all ingredients in a blender or food processor and process until smooth and creamy. Place in the refrigerator until chilled and serve immediately. Can be garnished with a dollop of vanilla flavored Greek yogurt and a spring of mint, if desired. If you’d like, you can add  sliced/quartered strawberries or mixed berries  to the soup. A dash of cinnamon is good in it too.
